Irish Texas Straw Hats

My sister Paige introduced me to this salad recipe. All of our children loved it. It is an easy meal to put together and full of flavor. It was a great meal  to make in Ireland. Because their hamburger meat [called mince] was tasteless, this recipe gave some flavor to the meat. You can add your favorite toppings like chopped onion, beans, kernels of corn, bites of avocado, but I enjoy this basic recipe the best. I do not usually buy iceberg lettuce and find Fritos® to be too rich as a snack, but this combination is perfect.

Texas Straw Hats 

Ingredients:

1 lb. of ground beef
1 taco seasoning packet
Iceberg lettuce, half a head chopped into bite-sized pieces or julienned
1 large tomato, seeded and cut into small pieces
1 lb. of shredded jack cheese
1 cup of sliced ripe olives
3/4 cup of jalapeños
1 1/2 cups of sour cream
1 1/2 cups of salsa
1 bag of Frito® corn chips

Directions:

Sauté the beef and drain the excess fat before adding the seasoning packet and 1/2 cup of water. Cook until water is absorbed. [Follow directions on taco seasoning mix packet which may vary from the above.]

Assembly: [to any desirable size for entrée or dinner salad]

Fill the bottom of a dinner plate [for entrée] with corn chips topped with the seasoned beef. Next add the shredded lettuce and cheese, tomatoes, olives, and jalapeños. Top all with sour cream and salsa. Dig in!!

This makes for a nice buffet dish. Just have big bowls of each ingredient and let your guests assemble their favorites.
